Add some extra virgin olive oil to a sautéing pan, Chop up some garlic and some root ginger and put in the pan. Add some sliced courgette, chopped up beans, some savoy cabbage and whole cherry tomatoes. Allow to cook as per your preference for the crunchiness of the vegetables. Turn off the heat and allow vegetables to relax! Add some chilli oil and stir and add some chunks of Colton Bassett stilton and replace saucepan lid. Serve after 10 minutes. The stilton will have softened and is delicious with the spiced up vegetables! Serve with a bottle of Emmett’s Rioja!
