Our mild cured ham is initially brined before being gently smoked over beech wood flour in our heritage smokehouses for up to 3 days. No buttons or dials to control the process-just the weather and the amount of beech wood flour! This results in a classic smoked ham that is ideal for sandwiches and breakfast!
